This is the recipe for the nut slice I make every week to keep the family snacked up in the best way possible. It is so easy but so yummy and nutritious.
Many participants have asked for the recipe so here ‘tis!
- 5 cups fruit/nuts/seeds/coconut…in whatever combination you like…even left over muesli or oats could go in
- 2 full tablespoons flour or binder…I use buckwheat flour but have also used almond meal and hazelnut meal successfully
- Spice to taste…I use cinnamon but again whatever takes your fancy maybe nutmeg would work too
- 3 eggs beaten
Mix ingredients in a bowl with a spoon until well combined. Press very firmly into a lined slice tin.
Bake for 30 min at 160 C (My oven is fan forced and this time and temp works perfectly. You might want to adjust for your own oven) Allow to cool for 10 -15 minutes and then remove and place on a rack. If left too long in the tin it will sweat.
I usually cut up into pieces when cool and put in a plastic container. It is good for at least a week if it lasts that long.
If you want something more decadent add some chunks of dark chocolate to the mix. Very yummy!
